I doubt you could do better from a preprepared product and its certainy easier than starting from scratch. Crisps and snacks in boxes and board snacks the same as found in the good old fashioned English pub. It took half hour to reach setting point but I think it was because I used standard sweet oranges, not seville.

The original recipe states preserving sugar but this is now so hard to get and twice as expensive as granulated so I would (and did) use that. I don't make marmalade as it's not my favourite jam, though I did make a lemon and whisky one once, which was nice, or did I go for lemon and ginger in the end? For a delicious melted white chocolate sauce, simply break into pieces and place in a glass or Pyrex bowl.

Already excited about my next batch as I just bought loads of Seville oranges at the market yesterday. Even if you have a sugar thermometer (look for 105C or where it says ‘jam’), I’d still recommend the saucer test. Organic Seville oranges are better for marmalade, as you are including peel (non-organic fruit is likely to have been sprayed with pesticides).

Sterilised jars, however, need to be filled while still hot – so can be kept in the switched-off oven if your marmalade hasn’t yet reached setting point. Just wash and dry them before you freeze them, use them from frozen and increase the boiling time until they’re cooked through. Am going to try the above recipe with lemons, but any advice from anyone with experience making lemon marmalade please let me know.If you don't have time to make marmalade while Seville oranges are in season, snap them up and stick them in the freezer, whole, for up to 3 months.
